Harbour Smokehouse Smoked & Roasted Salmon

Just as there is more than one way to skin a cat, there is more than one way to hot smoke a salmon. And, not surprisingly, different methods yield different results. We like our salmon moist and juicy, so we take our time and take it one step at a time. Step 1 - add some smoke. Step 2 - add some heat. And that's it. Easy peasy.
